Christmas food and fire

The Christmas tradition in Mexico is to have the dinner on Christmas Eve rather than Christmas Day as is the British tradition, and what delicious food it is.

Pork, when you ask most people here, is the main meat choice and last night’s pork ribs were absolutely incredible. Marinated for the whole morning and then cooked slowly for over 5 hours “en ataúd” under red hot coals to give the softest and juiciest pork you can imagine.
