For me, this experiment in soup is everything I want in a soup. Warming, full of flavour and something that really fills you up – especially on a cold December or January day in Monterrey. Yes, it really can get cold in this Mexican city due to its altitude and the effects of the Sierra Madre mountains that surround us.

A spicy camote (sweet potato), garbanzo (chickpea) and chicken soup with a lovely combination of sweetness from the camotes and a lovely earthy warmth from the Indian spices like turmeric, garam masala and chilli.

It’s a variation on the very popular “sopa de garbanzos” served here.
